Pepperoni and Spinach Stuffed Chicken Breast


Ingredients:

- 6 boneless chicken breasts

- Turkey pepperoni slices ( use 3 slices per piece of chicken )

- Shredded part-skim mozzarella cheese ( just enough to cover the turkey slices )

- Kikkoman Panko 100% whole wheat breadcrumbs.

- organic fresh spinach.

- Italian dry seasoning.

- Himalayan salt.


Method

  1. Heat oven to 375 degree F.

  2. Cover cookie sheet with foil and spray evenly with olive oil.

  3. Make a pocket in the chicken breast by making a slit with the knife parallel to the cutting surface.

  4. Stuff chicken breast with 3 slices ( more if you desire ), a sprinkle of mozzarella cheese and spinach.

  5. Seal edges and place on baking tray.

  6. Spray the top of the chicken breast lightly with olive oil spray

  7. Sprinkle the top with bread crumbs, Italian seasoning and Himalayan salt.

  8. Bake for 25 to 30 minutes or until the chicken reaches an internal temperature of 165 degree F.


Stove top Grilled Chicken Breast


Ingredients:

- 3 boneless chicken breasts

- Ken's Steak House Lite Northern Italian with Basil & Romano Dressing & Marinade

- Himalayan salt

- Garlic powder

- Black pepper

- Avocado oil


Method


1, Preferably marinade the chicken the day before or at least 4 hours before cooking.

2, Cut up chicken breast into 1/2 to 3/4 inches.

3. Add salt, garlic powder and black pepper to taste.

4. Add a generous amount of marinade.

5. Heat grill pan ( you can use you frying pan ) on medium heat.

6 Add enough avocado oil to lightly grease the surface of the pan.

7. Add marinaded chicken.

8. Cook until cooked through, roughly 15 minutes. Stir occasionally.


Roasted Vegetables


Ingredients

- 2 red bell peppers

- 3 broccoli crowns

- 1 sweet onion

- Olive oil

- Dried basil

- Dried oregano

- Garlic powder

- Black pepper

- Himalayan salt


Method


1. Line cookie sheet with foil.

2. Cut up all vegetables and place them in a mixing bowl.

3. Sprinkle the above seasoning.

4. Add 2 table spoons of olive oil.

5. Mix and spread evenly on cookie sheet.

6. Bake for 25 minutes at 420 degree F.


Baked Sweet Potatoes


Method


1. Wash desired amount of sweet potatoes.

2. Poke holes in them to allow steam to escape as they cook.

3. Wrap in foil.

4. Place in cold oven, set temperature at 400 degree F and bake for 1 hour.

5. When done, mash and sprinkle the top with cinnamon powder.


Spinach & Garlic White Rice.


Ingredients:

- 1 cup organic spinach chopped

- 2 cups jasmine rice

- 2 tbs olive oil

- Fresh cilantro

- Garlic powder


Method


- Add 2 cups of jasmine rice, 2 cups of water and salt to aroma rice cooker.

- As soon as rice is cooked, pour into a mixing bowl.

- Add 1 cup of raw chopped organic spinach.

- 2 tbs of olive oil.

- Garlic powder to taste.

- Mix well.
