Easy Chicken Taco Recipe For The Family ( Low Carb, High Protein Option )

This is an easy, quick recipe to meal prep for the entire family! Which kid does not like tacos and you have the option of a high protein, low carb meal for you :-)




For taco chicken


Ingredients

5 boneless chicken breasts

2 packs of McCormick chicken taco seasoning ( or any flavor taco seasoning of choice )

1 tablespoon oil ( I use avocado oil )

1/2 - 3/4 cup water ( depends on how spicy you like it )

flour taco shells

mild cheddar cheese


For salad

avocado

tomatoes

black beans

feta cheese

cilantro

Romaine lettuce

Salad dressing of choice ( I use the hidden valley ranch greek yogurt dressing because it is only 60 calories per serving and it taste great )


Method (recipe is on the McCormick package)


Cut up chicken into 1/2 inch strips ( remove fat )

Heat oil on medium heat

Add chicken and cook for 3 to 5 minutes or until no longer pink

Stir in seasoning and water

Bring to boil, Reduce heat and simmer 5 to 7 minutes or until most of the water is absorbed.


Kids Option



Spoon chicken taco onto flour taco shell

Top with favorite toppings ( my kids like mild cheddar cheese)

Romaine lettuce salad with hidden valley light ranch dressing




High Protein Low Carb Option




Chicken taco ( 4 ounces )

Cilantro ( optional )

Avocado 25 grams

Black beans 1/8 cup ( just a sprinkle, you can omit if you do not want the extra carbs )

Tomatoes ( to your liking )

Feta cheese ( For this prep I could only find the Frigo crumbled feta cheese, use 1/8 cup however I usually use 1/4 cup of Stella reduced fat crumbled cheese )

Hidden ranch Greek yogurt salad dressing ( I use 1 tbsp which is half the serving because the taco chicken has lots of flavor on it’s own )


Total calories 355, Protein 42 grams, carbohydrates 17 grams, Fat 12 grams
